Gajarachi koshimbir

Carrot salad
Usually I try to make a salad at dinner. In winter there is a wide variety of vegetables available in the market.  Particularly carrots, we call it 'delhi carrots'. These are very juicy and sweet. So the salad also tastes  sweet.

Ingredients
2-3 delhi gajar(carrots)
1/2 cup roasted and crushed peanuts
salt to taste
1/2 tsp sugar(optional)

Tempering

1 tsp ghee/oil
1/2 tsp mustard seeds
1/2 tsp asafoetida
1/4 tsp turmeric powder
1-2 green chilies
3-4 curry leaves

Garnishing
2-3 stalks of coriander
1 tsp fresh lemon juice


Method
  • Wash and grate the carrots
  • Mix roasted and crushed groundnuts/peanuts powder.
  • Mix chopped coriander,salt,sugar. Squeeze the lemon juice.
  • Heat the ghee in an  iron ladle(paLi). Add the mustard seeds. As they crackle add the remaining tempering ingredients.
  • Pour the contents into the salad. Mix well.
  • Serve fresh.
